The rolling hills of Central Texas on the Edwards Plateau produce
the natural forage that is ideally suited to the animals we produce.
The free-range environment provides the animals with the opportunity
to consume a varied diet, and gives the meat a delicate, but not
bland flavor. Axis, Fallow, & Red Deer meat all possess this
unique and exceptional taste that is the rich, earthy flavor that
inspired the descriptor “gamy.” Exotic venison meat
can even leave a remnant of wine, fruit, or musky flavors on the
palate, which is why it is so commonly served at wine tastings where
the food presented is supposed to complement and help bring out
the deeper flavors of the wine instead of competing with it. The
flavor of exotic venison meat is a far cry from what people traditionally
consider a “gamy” taste due to the fact that this conception
is based on venison meat that was originally obtained through the
sport of hunting deer native to our country. White Tail deer and
Mule deer, among others, are the species of deer that are hunted
for sport in the United States, but the flavor of this meat is much
stronger than that of exotic venison species because of the types
of forage that they consume. Native deer eat a greater amount of
nuts, roots, berries, cactus, leaves, etc. than Axis, Fallow, &
Red Deer, whose main source of sustenance is grass from herd grazing.
This is why the exotic venison meat that is served in restaurants
has a much finer taste than the venison meat that hunters bring
home from their vacation excursions. Restaurants use exotic venison
meat just like we offer to our customers. Our venison is preferred
and purchased by many well known and respected chefs in the United
States.
Wild Boar is another game meat product that we make available to
our customers on a regular basis. It is naturally raised pork obtained
from the same free-range environment that our venison comes from.
The diet of naturally raised hogs is diverse forage found on the
land and not in a feed trough like regular commercially raised pork.
Because of this richer diet and the significantly greater activity
and exercise level that these hogs receive from living in the wild,
the meat possesses more flavor and a little less fat than industrial
pork meat. Because increased amounts of fat on the hog contribute
to a stronger taste in the meat, we only harvest hogs under 100
pounds in weight. This ensures that the meat will always have a
high quality flavor and tenderness. The Wild Boar meat that we provide
our customers is from Texas just like our venison and can be used
in any of your favorite recipes which call for pork. We pride ourselves
on the fact that it is some of the best flavored pork meat to be
found.
The Quail we provide is also Texas grown and of the very best quality.
Quail meat is slightly darker in color and of smaller cuts, due
to its smaller size, than regular poultry meat. It also exhibits
the richer flavors of a game meat, but is very delicate and much
more tender than other poultry. Quail is a great dish to serve guests
because it is easy to prepare, already comes in reasonably sized
portions for each person, and pairs very well with most white and
even some rosé wines.
Our goal is to bring to the consumer the finest quality of domestically
grown game meats. If you desire fresh product, it must be ordered
before a harvest, since all meat which is not pre-ordered is packaged
and frozen as soon as it is cut in order to insure. The exception
is our Texas quail, which is always shipped frozen. When ordering
our meats, be sure to specify fresh or frozen product. We ship from
the USDA facility, which processes our products, directly to the
consumer or restaurant.
At different times of the season, we will offer additional products,
such as Texas Elk, Antelope or Bison (Buffalo). Please check our
specials, which change frequently. Our Texas venison is known for
its mild flavor and natural tenderness, and can be found gracing
the tables of fine restaurants all across America.
